The Donati domain has been around since the 1930s and currently Camillo – third generation Donati – makes the wine here and lives on the domain with his wife and children. About 11 hectares of wine are cultivated, using organic and biodynamic principles.
The domain is located about 20 km south of Parma in a hilly area with altitudes of about 250 meters above sea level. Camillo grows, among others, Malvasia di Candia Aromatica, Malvasia Rosa, Lambrusco Maestri, Sauvignon Blanc, Moscato Giallo, Trebbiano, Pinot Blanc, Merlot, Cabernet Franc and Barbera, which are vinified separately in (almost) all cases. Everything is spontaneously fermented with skin contact, without temperature control, after which the wines are bottled without fining or filtering. In order to get the wines sparkling, this bottling takes place at the right time during active fermentation, which builds up pressure in the bottle. This is also known as the ancestrale method, the application of which is somewhat unusual for a Lambrusco and sparkling wine producer in this region.
Camillo's wines are wines that have little to do with supermarket-quality Lambrusco's that are made per hectolitre by his locals. These are wines that are pure, energetic and often mega aromatic at the same time, which means that they all have a high drinking level. Nothing is added to the wines, and nothing is taken away, which can be tasted in the wide variety of wines Camillo makes. Drink them all, and drink them young and cool!
