The Yama is 100% Yamada Nishiki, polished to 70% and brewed with environmental yeasts and lactic acid bacteria (Yamahai method). The sake is completely unpasteurized. It is a nicely layered sake, exciting because of its nice acidity, complemented by savory rice notes. The aftertaste of the sake is remarkably long. Can be drunk at any temperature.
