Cinsault with a little Grenache. After the manual harvest, the sorting takes place on the property and then in the cellar. The grapes are chilled overnight and then placed in a vat by gravity. It macerates for 5 days and then gravity destroys it. The juices are pressed and flowed in old barrels that are more than 10 years old. The wine ages in concrete barrels. The wine is full & tense with notes of tobbaco, licorice, candied fruit and garrigues with nuanced of sweet spice. Elegant with a finish reminiscent of orange peel.
