Chōkyū Red is a beautifully balanced ginjõ sake, made from Omachi rice. The sake is not filtered or pasteurized, nor is it diluted. After brewing, the Chōkyū Red is aged in an air-conditioned room for 2 years. The sake has a full, slightly sweet rice taste that combines very well with (raw) fish and meat dishes.
