The grapes for this beautiful Clairette are put into whole bunches in vats, macerated for eight days. The aging is done six months on the lees followed by nine months in vats. The beautiful golden color develops buttery notes and on the palate it is fruity, mineral, a nice tension that turns to absolute elegance but with pep. You drink it on its own for the complexity it gives off, but of course it pairs with lots of foods!
