Sake made partly from black rice, which is purple inside, resulting in a unique red color. The sweetness and acidity of this sake leads to a fruity taste of pomegranate followed by a note of olives. The black rice is a prehistoric type of rice, which has been preserved by the Tokyo Agricultural University and is re-grown by the brewery for the production of this sake.
