Expressive and introspective. A parcel on flint and gravel with southeastern exposure. Fermentation with indigenous yeasts to dry, 24 hours of maceration. Élevage in 500L barrique. Nothing added or removed. Intense, well balanced and powerful. Notes of yuzu, salted apricot, orange flower water and soft spices. In the mouth it's long and ultra fine. The intention of Ixilune was to be a balance of the 5 flavours, a balance of sweet, salty, umami, bitter and sour. There's a linear acidity that gives this wine an edge. Packed with energy, its a singular white wine with subtle notes of toasted sesame & caramel with playful reduction.
