The Kizan is a ginjõ sake, which means that at least 40% is polished so that only the core of the rice grain is fermented. Freshness and especially elegance are achieved with this, but this Kizan is also surprisingly soft and even 'full-bodied'. Japanese Alpine water is used to keep the product as pure as possible and the sake is undiluted and unpasteurized. Compared to other ginjõ sakes, this sake has a higher acidity, but an excellent balance due to its full flavor and strength. Refreshing (green) apple next to the soft milk tones and in the spicy finish a pinch of white pepper.
