An atypical and vibrant sparkling wine. The fruit is directly pressed fermented in steel and aged 1 year in bottle before release. Fine bubbles, a nose of green apple, rye bread, elderflower and a point of smoke. The palate remains on Granny Smith apple and chalk with a yoghurt tang. Purity and absolute tension with unexpected medium rich body and persistent finish.
