Tot Blanc 2021, Celler Tuets

Two different varieties from two opposing plots. Harvested together on the same day, 50% of the grape is de-stemmed and lightly crushed, and the other 50% is just de-stemmed without crushing. All put together in the same vessel for a week and then pressed. Finally, 8 months of fermentation in stainless steel vessels. notes of ripe tropical fruit (pineapple, green mango). Creamy and soft-textured with surprising volume, aniseed tones and a pleasantly bitter touch.
